For centuries, the purpose of food processing was to make food edible, safe to consume, and durable. More recently, food processing has introduced innovation to improve the environmental sustainability of products, increase the availability and affordability of products, meet new societal models and add variety to an offer that meets everybody's dietary needs and preferences.The event "Understanding Food Processing" will discuss the role of food processing in modern food systems and delve into the ongoing debate surrounding the so-called "ultra-processed food", looking at their impact on the agri-food value chain – from farmers to consumers, on health, and on the environment.
